I use some mushrooms, peppers (red, green, yellow) onion (purple one) cherry tomatos, and sliced up potato. Put all of 'em through the skewer, drizzle some italian dressing over top, and grill. Some white rice and fresh or canned corn would compliment. :)

It is by Carol Gelles, named 1,000 Vegetarian Recipes.. I have tried a few recipes, and they have turned out pretty good! It cost $35.00 at Barnes and Noble.. If you don't want to buy, maybe your local library would carry it?"

DBrew said: "I AM a vegetarian and it is quite easy and satisfying to eat this way. There are a host of low fat high fiber meat substitutes that are excellent replacements for the real deal. Also there is polenta and falafals, peroghis,tofu,piZza with veggies, spaghetti with marianara sauce,etc... Your local library and various websites are good sources for iteresting and healthy family type recipes."
