Fruits and Veggies

Heather said: "Lots of good info there. It never hurts to have a diet rich in fruits and veggies of all sorts. Plus it keeps your diet interesting. If you're never bored with what you are eating, it is easier to follow."

Some that might interest y'all: 1) Different salad greens like arugula, endive, lamb's lettuce, fresh spinach, raddichio, and dandelion greens (you have to pick them when they are young and have no blossoms yet...and wash 'em really well) 2) Fennel-tastes sort of like licorice celery 3) Jicama-kind of a cross between an apple and a potato 4) Passion fruit 5) Pomegranates! I love these. They are what I call a "busy food"...you have to work pretty hard to eat it because of the seeds but it leaves you really satisfied. 6) Artichokes...another "busy food". Your kids might like them because they are fun to eat 7) Ugli fruit-kind of like a tart orange 8) Red bananas-these are really small and a lot sweeter tasting than the normal Chiquita ones 9) Sweet Potatoes...try eating them as oven fries using this awesome recipe: Spray sweet potato sticks with butter flavored cooking spray. Put them in a clean baggie and add 1 Tbsp brown sugar and 1 Tsp. Cinnamon. Shake well and put them in a layer on a cookie sheet. Bake at 375 for 10-15 minutes until they get golden and tender inside. These are AWESOME for dessert!!!"
