Chicken Salad


Heather said: "I made some chicken salad for lunch today. It was pretty darn good! Today is warmer than what it has been so for some reason it tasted lighter and better! Makes about 4 servings. Here it is: 10 ounces white chicken canned (no carbs) 1 boiled egg chopped up (no carbs) 1 dill pickle slice, chopped or use dill relish (less than one carb) 2 teaspoons Cracked Peppercorn dressing made by T Marzetti (2 carbs) Fresh Cracked Pepper Muenster Cheese (no carbs) Shredded Lettuce (less than 1 carb) Whole Wheat Low Carb Tortillas. (2 net carbs) Mix first 5 ingredients well. Warm tortillas in the microwave for about 20 seconds, spoon mixture evenly, then top with some shredded lettuce and cheese. Fold and Enjoy! Could be served with cottage cheese, a fruit bowl or a salad. Hope that you enjoy!"

Heather said: "You could also use Tuna in place of the chicken, if you wanted to."

Heather said: "That sounds like another good recipe. I'll have to try that the next time!"

Heather said: "By my math, they are about 180-200 calories each. You can cut 50 calories by not serving it on a tortilla and serving it on a bed of lettuce, instead."

Cupcake said: "Ooooh yum. I love chicken salad. I make mine with a cup of shredded chicken, a tablespoon of nonfat mayo, a tablespoon of nonfat sour cream, and 1/2 cup of sliced celery. On whole wheat crackers or triskets. :)"
