2 slices canadian bacon, cut into small pieces.
Bit of shredded cheddar cheese.
Cooking spray
Spray skillet with cooking spray. Warm canadian bacon.
Add eggs and salsa, scramble. Cook till done. Then top
with a bit of shredded cheese, melt.
Warm tortillas in the microwave for about 20 seconds.
Divide eggs and place in the middle of warmed tortillas and wrap."
Heather said: "The tortillas themselves are pretty nice. You can make a ton of stuff with them."
Heather said: "The ones I have been using are made by "La Tortilla Factory"
They are whole wheat, 50 calories per with 3 net carbs, and 8 grams of dietary fiber. I made a really good wrap for dinner tonight, maybe I'll have to post it up.."
Heather said: "You can make quesadillas with them, too. Top with a little cheese, mild green chiles (you probably like em hot in TX) and some grilled chicken.
They make for an easy lunch or quick snack :)"
Heather said: "..and you can top them with salsa!"
UniqueMystique said: "The Albuquerque brand tortillas are low carb...only 4 grams (lower than any other low carb ones out there). They taste better too! White and oh so soft! A bit on the thin side though....which is great because you can't 'overfill' them. ;)"
UniqueMystique said: "I eat the whole wheat ones too, Snap. I just like these for when I get the hankering for the 'white' ones. I'm not much of a bread eater....but it's kinda hard avoiding the tortillas and chips when you're in Tex-Mex central! Plus....I love salsa! Just isn't the same on a pork rind or celery. :D"

I usually make mine with eggs, diced and sauteed turkey bacon, onions, mushrooms, and sometimes a little cheese. I put them in corn tortillas (my husband likes those better than the flour ones) and wrap them in waxed paper. Then I freeze them and you can microwave them when you want to eat them."
nattie said: "I did this exact same thing last weekend. It was soooo good. I used Egg Beaters that has peppers in it for my eggs. Love those not high in cal's either."
penny6 said: "why not add some peppers, onions or hashed brown potatoes?
i might have to give this a try."
MiMi2 said: "My son loves those things..what I do differently is that I scramble the eggs, put the cheese or whatever topping and roll them up..close with a toothpick then place them in a pan in the oven until that are toasted. I use no oil on the tortillas."
