That gets me to about 1125 calories per day… and allows me one healthy snack to stay near my target of 1200!

Cupcake said: "I like to slice up an eggplant, pour light marinara sauce over it and bake it in the oven for a few minutes and then put nonfat mozzarella cheese over the top. A fast and much healthier version of eggplant parmigiana."

I'm new to this forum, but I just had an idea. I don't know about everone else but I feel like i'm running out of healthy things to eat! If we all posted a few meals we enjoy we might be able to mix it up a bit.
I have a realy good recipe for boneless, skinless chicken breasts with light feta and tomato sauce. I just kinda copied it from a restaurant and it is really good.
I also really like light deviled eggs. Instead of mayo you use a bit of light ranch salad dressing.
Let me know if anyone wants the recipes, or if you need more ideas.
I know I would sure like some new ones.
