Easy Fried Rice

Heather said: "This is something I've been cooking lately.. It's pretty easy and light.. I cook 4 servings of Instant Rice. Put about 2 tablespoons of olive oil in a heated wok. Add about 1 1/2 cups of fresh or frozen veggies (brocolli, carrots, snappeas, peas, water chestnuts, bean sprouts or whatever other veggies you like.) Stir fry in heated oil until crisp. Add rice, and stir fry for a couple minutes. You can add seasonings such as light soy sauce, ginger salad dressing, or schezuan for more flavor. Serve as a main course or as a side dish.. You could also add cooked chicken, beef, pork or shrimp if you desire.."
